Out of my 5 Mt. Etna types, this is my favorite. There is something extra in the flavor that I really enjoy- maybe a little acidity. Otherwise it behaves like a typical Mt. Etna with similar size and growth patterns. I prefer this one not over-ripened- it is a little more fruity when picked just right.
